Allspice is the dried fruit of the P. dioica plant. The fruit is picked when it's green and unripe, then dried in the sun until the are brown. The whole fruits have a longer shelf life than the powered version.

Whole Allspice is often used:

  • In Caribbean cuisine
  • To infuse flavor while cooking and removed before serving
  • In pickling spice
